Caldo de Albondigas

ingredients:
1 lb hamburger
1 egg
1/2 yellow onions chopped
1 small can tomato sauce
3 cans beef broth
2 large carrots, sliced
1 chayote (mexican squash)
1/2 cup string beans, cut into 1" pieces
1/2 cup rice
1 1/2 cup chopped fresh mint leaves
1 cup chopped fresh cilantro
dried oregano
table spoon minced garlic
pepper and salt
hot sauce to taste






in a large saucepan combine beef broth, tomato sauce, onions, & garlic. bring to a boil.
add string beans, carrots, and chayote, bring to a boil.












combine ground beef, rice, mint, salt pepper, & egg

form small to medium sized meatballs







drop meatballs into boiling soup. cover and cook for 20 minutes or until done.
